Mrs. Sutherland's Spaghetti Squash Salsa

 

I can’t quite remember when my mom started to make this salsa, but it’s been a family favorite ever since. She got the recipe years and years ago from a dear friend, Mrs. Southerland.

I’ve never really had a salsa quite like it, and never really come across other recipes similar to it in my searches (even when I type in “Spaghetti Squash Salsa” on a Pinterest search… nada!)

It’s a light and fresh crowd pleaser that sets itself apart on holiday spread that’s overflowing with meat and cheese boards, creamy dips, and sausage balls. Guests are always a little timid to try it but shocked at how delicious it is.

To be honest, I’ve made this and eaten it as a main course salad topped with shredded chicken, cheese and avocado. It was on our menu (the very way I described) this week, actually. To make the meal extra kid friendly and filling, we had cheese quesadilla wedges with it instead of chips. Did my little ones eat the “salsa”? No, but they were exposed to it and found other options they enjoyed. That’s what I call a win-win meal!
