Dijon Lentil and Kale Salad

 

Every once and a while I crave lentils and this salad always comes to mind. It’s simple to make, could be classified as a one pot meal (if you aren’t having meat), or a two-in-one side (combining veggies and starch… all you need is a meat!).

I normally have this salad just the way it is as a meatless lunch. I may add some hummus or tzadziki and pita and a sprinkle of pumpkin seeds for some crunch. I’ll also top it with a few runny eggs… weird, but delicious! For dinner, we usually top it with some maple roasted salmon or a plain rotisserie chicken… how easy is that! And I never turn up my nose to serving it with good ‘ol chicken nuggets (a win-win for everyone!).

Just today, actually, my youngest asked for some of this salad when I was eating it for lunch. He’s my experimental eater (willing to try anything) and gobbled up an entire 3 bowls of it! My more finicky eater hardly tolerates the dish on his plate - he’s “learning to like” it. If we have this dish for dinner, I always make sure to have something he enjoys with the meal - chicken, pita and hummus, apple and peanut butter as a side (why not!).
