Veggie Quinoa Bites

These veggie quinoa bites are a perfect Baby Led Weaning food. I pull them out of the freezer and pop them in the microwave for a quick lunch or dinner at home. Or, I put them in a lunchbox frozen so they thaw by lunch-time at day care. They check all the nutritional boxes - veggies, whole gains, protein (from eggs and cheese) and fats (from eggs an cheese). I usually add fruit to complete the meal. Don’t get me wrong, everyone in the house can eat these, though. I like them best on top of a salad with avocado and a simple vinaigrette. Enjoy!

Veggie Quinoa Bites

Yield: 48 bites

Ingredients

  • 2 Tablespoons olive oil
  • 1 cup finely chopped onion (about 1 medium)
  • 2 small broccoli florets, finely chopped (about 2 cups)
  • 1 cup grated carrots (about 2 large carrots)
  • 1 cup frozen peas
  • 4 large eggs
  • 2 cups shredded cheddar cheese
  • 3 cup cooked quinoa

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large skillet, heat olive oil over medium high heat.
  3. Add onion, broccoli, and carrots.  Sauté for 5 minutes until the onions are translucent.  
  4. Add 3 Tablespoons of water, reduce heat to low, cover, and cook 4-5 more minutes until veggies are tender.
  5. Stir in frozen peas and set aside. 
  6. In a large bowl, beat 4 eggs.  Add cheese, quinoa, and cooked vegetable mixture. Mix until well combined.  
  7. Spray a silicon mini muffin pan with non-stick cooking spray.  
  8. Fill each muffin hole with a heaping spoonful of the quinoa and veggie mixture (you can literally fill up the hole and pile it high.  These don't rise when baking - if anything they shrink) .  Bake at 400 for 15 minutes.  Remove each bite immediately from the muffin pan and allow to cool on a wire rack.
  9. Spray the muffin pan again and use the remainder of the mixture. 
  10. Freeze the bites while they are still on the wire rack.  Once frozen solid, transfer to a freezer store bag or container.  These will keep for 3 months.
