Honey Mustard Salmon
Salmon and honey mustard? Don’t knock it ‘till you try it! This sheet pan meal comes together in literally minutes and if you line your sheet pan with foil, clean up is a breeze. We often complete this meal with a packet of 90-second microwaved rice, but roasted potatoes or quinoa or pasta would also work. As always, feel free to use your family’s favorite veggie instead of asparagus. Any quick cooking veggie would work (green beans, chopped zucchini or summer squash, baby tomatoes, or mushrooms). This recipe is how I introduced salmon to my kids. I let me 3 year old “paint” the sauce on the salmon hoping he would try it. I ended up scraping the sauce off for him because he didn’t like how it looked, but hey… he tried it! Salmon is also a hit or miss food for them, sometime they gobble it up, other times they act like I’ve served them worms for dinner. Kids……
Honey Mustard Salmon
Ingredients
- 3, 4-ounce salmon filets
- 1 bunch of asparagus, trimmed
- 1 teaspoon olive oil
- 2 Tablespoons grainy Dijon mustard
- 1 Tablespoon honey
Instructions
- Preheat oven to 400 degrees.
- Arrange salmon and asparagus on a large baking sheet.
- Combine mustard and sauce in a small bowl to make a paste.
- Smear paste over salmon.
- Toss asparagus in olive oil.
- Bake for approximately 15 minutes until asparagus are tender and salmon registers at 145 degrees.
