Tortellini Pesto Pasta Salad
What a simple pasta salad, this is! I take help where I can get it and use the quick cooking (and mighty delicious) fresh Kirkland tortellini and Kirkland pesto from Costco. Both ingredients are always in my freezer… yes, freezer. I store the tortellini in there to keep it fresh and freeze the pesto in ice cube trays so I have small amounts to pull out when I need it. Feel free to use a variety of vegetables, whatever your family enjoys - this is our favorite combo.
Tortellini Pesto Pasta Salad

Ingredients
- 1.5 pounds fresh Tortellini pasta (I used Kirkland brand)
- 2 large broccoli heads, stems removed and cut into small florets
- 1 large bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, diced (about 1/2 cup)
- 1/2 cup pesto (I use Kirkland brand)
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions (do not overcook)
- While waiting for the pasta water to boil, steam the broccoli. Place the broccoli in a microwave safe dish, cover with damp paper towels, and place in the microwave for 2-3 minutes until it's bright green and softened, but still has a crunch.
- Add steamed broccoli, bell pepper, cherry tomatoes, and red onions to a large bowl.
- Once the tortellini is done cooking, add it to the bowl.
- Pour on the pesto and toss everything to combine.
- Season as needed.
