Daddy Mike's Salmon
This recipe goes way back to my “food roots”. It’s one of the first times my family and I ate salmon… as far as I know! My dad was always in charge of gilling and this recipe just reminds me of him, we even call it “Dad’s Salmon”… but now it’s “Daddy Mike’s Salmon” (as my kids know him). The flavors are perfect and the cooking method is unique, I’ve never seen salmon cooked this way on Pinterest! It takes minutes to make the “filling” and grills up in 20 minutes. We serve it with familiar and accepted sides because salmon is hit or miss for the kiddos. Enjoy!
Daddy Mike's Salmon

Ingredients
- 2-3 pound salmon filet
- 5 gloves garlic, minced
- 3-5 sundried tomato halves marinated in olive oil, chopped
- 1/4 cup minced parsley
- 3 Tablespoons olive oil
- 1/2 teaspoon salt
- pepper to taste
Instructions
- Preheat grill to medium - high heat.
- Line a grill safe pan or grill rack with foil.
- Place salmon on foil.
- Create slits in the salmon every 2-3 inches with a sharp knife. (The slits will hold the filling).
- To make the filling, combine garlic, tomatoes, parsley, olive oil, salt and pepper in a small bowl.
- Stuff each slit with the filling mixture.
- Place the pan or rack on the grill and allow to cook until the salmon registers 145 degrees, about 20 minutes.
