Sausage Lentil Vegetable Soup
This recipe comes from It’s All Good Vegan “One-Pot Vegetable Lentil Soup”. I made a few changes to suit my preferences/cravings for the week. I added sausage (because YUM!), beefed (ironic choice of words!) up the vegetable content a bit, use fire roasted tomatoes, but kept her blend of spices. I didn’t know how the addition on lemon juice would go with all my changes, but it really rounded out the flavors nicely!
If you’d like to keep it vegan, head to the link above for the original recipe. I find that the sausage made it more kid friendly for one of my children (but he loves lentils anyway… so…), and made it more “husband friendly” (HA!) as he gobbles up anything with pork.
Serve this with grilled cheeses, crusty bread, crackers, or cornbread and a side of fruit to complete a family friendly meal.
