Easy Skillet Broccoli
Did you know that broccoli is one of the most, if not the most, accepted veggies for kids? When I work one-on-one with people and ask them what veggies the like or dislike, I get a lot of answers such as, “Well, I like broccoli”.
This recipe is a quick and flavorful way to serve broccoli when you’re tired of simply steaming it, or don’t have the time to roast it. It’s perfect for our little people because it’s on the softer side, but the stems still have a little bite to them.
I find that if I’m meal prepping at nap time and one of my kids wakes up to me cooking this, they’ll quickly eat half the pan as a after nap snack - I’m not complaining, but just warning you… make extra!
Easy Skillet Broccoli

Ingredients
- 2 large broccoli crowns, cut into florets
- 1 Tablespoon avocado oil
- 1 Tablespoon minced garlic (I used jarred for ease)
- 1/2 cup chicken stock
- 1-2 teaspoons butter
- salt and pepper to taste
- Lemon zest (optional)
Instructions
- Heat the oil in a skillet over medium high heat. Add garlic and cook until just fragrant (1 minute or so).
- Add broccoli florets and sauté for about 2 minutes, stirring constantly to not burn the garlic.
- Add chicken broth and cover the skillet and reduce the heat to low. Cook for about 5-6 minutes or until broccoli is tender and most (or all) of the liquid is absorbed (sometimes there's a little liquid still left and that's okay).
- Uncover the pan and sauté for an addition 2-3 minutes on high heat to absorb the remaining liquid. During that time, season with salt and pepper, add the butter, and serve (or eat straight from the pan... because its that tasty!)
- Garnish with the zest of one lemon. Try it, it does something special!
