Beef and Bean Sloppy Joes
This sloppy joe recipe is not your typical “Manwhich” sloppy joe. It’s full of fiber from the addition of beans, its lower in sugar, and takes just a liiiiiiitle bit longer than the canned stuff.
Eating Well Magazine has a Beef and Bean Sloppy Joe but I didn’t like how it called for 12 ounces of beef (I buy mine at Costco and its in 1.25 pound packs!) and that it only uses 1 cup of beans (so I’m left with half a can of beans lying around). To make up for the extra beans and beef, I played around with some of the spices and sugars - mostly to make sure it was palatable for my kids. My younger one LOVES this recipe and eats the sloppy joe mixture with a spoon. My older one mostly just eats the bun - mixed dishes just aren’t his thing.
I serve this with steamed broccoli and tater tots most of the time, but every once and a while I’ll forgo the bun and serve it on a sweet potato (like chili!) and its delicious!

Beef and Bean Sloppy Joes
Ingredients
- 1/2 Tablespoon olive oil
- 1.25 pounds ground beef
- 1 can black beans, rinsed and drained
- 1 small onion, chopped (about 1 cup)
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- pinch of cayenne (optional)
- 1 cup no-salt added tomato sauce
- 4 Tablespoons ketchup
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon Dijon mustard
- 1 Tablespoon brown sugar
- salt and pepper to taste
- 6 hamburger buns
Instructions
- Heat olive oil in a large pan over medium high heat.
- Add the beef, beans and onion to the pan and start to break up the beef with a wooden spoon.
- Cook the mixture until the beef is browned and cooked through, about 7-10 minutes.
- Meanwhile, while the beef mixture cooks, combine the remaining ingredients in a large measuring bowl, stirring to combine.
- Once the beef is browned, pour the tomato sauce and spice mixture over the beef mixture and stir to combine. Let it all simmer for about 3 minutes to remove any excess moisture (you want it to be sloppy, but not runny).
- Let the pan cool for about 5 minutes and serve it on buns.
