Black Bean Feta Dip
Black beans, feta and corn in a sugary, vinegary sauce… hmmmm, interesting. I know. The first time I served this (a long time ago) people gave me a skeptical look as I placed in on the buffet of snacks and apps. But, it ended up being a hit. Somehow the sweet corn, salty feta, and acidic vinegar flavors just work! I’ll never forget this one guy’s reaction as he took a bite, “Whoa! This is actually good. I thought I was going to have to spit it out!” Ugghhh, thanks….
Its a nice, light (as in not smothered in mayonnaise and cheese) appetizer for your next get together!
Truth be told I have not made this for my kids yet. So, jury is out. I’ll come back with the verdict.

Black Bean Feta Dip

Ingredients
- 1/4 cup light extra virgin olive oil
- 1/2 cup apple cider vinegar
- 1/4 cup sugar
- 1, 14-ounce can black beans, drained and rinsed
- 1, 14-ounce can white corn, drained
- 1 bunch green onions, chopped
- 4 ounces feta cheese (or more, if desired)
- dash of garlic powder
- salt and pepper to taste
Instructions
- Combine olive oil, vinegar and sugar in a small bowl. Stir to combine and refrigerate for one hour.
- Combine the remaining ingredients in a medium bowl. Add the vinegar mixture and stir to combine.
- Refrigerate and serve with tortilla or pita chips.
