Balsamic Beef Tip Pasta

 

Let’s call the recipe an ode to Trader Joe’s, shall we?! I happened upon this creation when using leftovers one day, and I decided that my little concoction was so good that it deserved an official “recipe”.

I love this recipe because, truthfully, I use Trader Joe’s products and pantry staples. The Balsamic Rosemary Beef Steak Tips is one of our favorite pre-marinated meats. Trader Joe’s Whole Wheat Fusilli Pasta is my favorite pasta (the texture of it is just better than most other whole wheat pastas), their frozen French Green Beans are always in our freezer and the Bomba sauce makes an appearance on our table every night as a condiment - we like spice!

You could also buy the pantry staples (vinegar, olive oil, artichokes, and Dijon) and produce (tomatoes) there, why not!

We eat this salad warm or cold and it makes for great leftovers the next day at lunch.

Balsamic Beef Tip Pasta

Ingredients

Salad
  • 1 package Trader Joe's Balsamic Rosemary Beef Steak Tips already grilled and sliced thin
  • 8 ounces whole wheat fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 can artichoke hearts, drained and halved
  • 1 cup crumbled feta cheese
  • 12 ounces frozen French green beans
  • Chopped basil, for garnish
Dressing
  • 3 Tablespoons olive oil
  • 3 Tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Trader Joe's Italian Bomba Hot Pepper Sauce (plus more, if you like the heat)
  • Salt and pepper to taste

Instructions

  1. Bring two medium/large pots of water to a boil - one is for the pasta, and one is for the green beans. 
  2. Cook the pasta according to the package directions.  Simmer the green beans for 5-6 minutes until tender.  
  3. Drain the pasta and green beans once done and set aside.
  4. In a large bowl combine the tomatoes, feta, artichoke hearts, and steak.  Add the pasta and green beans.
  5. Place all the dressing ingredients in a mason jar (or small bowl)  Shake vigorously (or whisk) until all the ingredients are combined. 
  6. Pour the dressing over the pasta mixture and toss to coat.  
  7. Mix in more Bomba sauce as needed for serving and garnish with basil.
