Weekly Meal Plan July 24th - July 30th

 

A very exciting weekend is ahead of us! I’m taking the boys to visit my family in Charlotte, NC. This trip was planned so that my little one (he’s 18 months) could get used to my parents house before he has to stay there in August while me husband and I go on a trip. But, really, I just miss my family! It’s only been a little over a month since we all went to the beach together… but I miss my old home. Visiting my old house and my family recharges me - it fills my cup. My grandmother also made the move down from Kentucky last week to be closer to family and I haven’t seen her in years!! That’s awful isn’t it! Just thinking about this trip makes my heart so so so full!

Now, food-wise, there’s not much planning for the long weekend ahead. There will be nights where my mom and I will throw dinner together and there will be nights when we eat out. Not having a plan is refreshing. However, coming home without a plan is not refreshing. Next week is busy and I’ll need to have my act together to get meals on the table, especially when there’s no weekend time to prep ahead. I’ll have done all the grocery shopping before leaving town so the fridge is ready with everything I need. But, as a look at what I’ve planned, I don’t need a lot!

Let me explain… we’ll start with Meal 3.

Meal 3: Remember the black bean burger bowls I did a few weeks ago? Well, the leftover burgers have been hiding in the freezer and need to be eaten. I love these Gimmi Delicious Avocado Black Bean Quesadillas, so I’ll just sub out crumbled black bean burgers in the place of actual black beans. This night I might try to add a bit of SOMETHING into my cheese-quesadilla-lover’s quesadilla (a.k.a. my picky eater’s quesadilla). We’ll have a side salad, some veggies and hummus, chips and fruit.

Meal 4: A go-to, simple dinner. I take chicken thighs and simmer them in the sauce according to the directions. I usually add a can of rinsed a drained chick peas at the end of cooking. While that cooks I heat up some Kirkland frozen stir fry veggies and cook the Trader Joe’s Harvest Grain Blend. We’ll have pita (which the three year old tells me he doesn’t like anymore, hmmmmm….) and hummus and fruit. I’m now realizing that I’m going to be using three pans here and I don’t like it…. I’ll let you know if I do anything to resolve that issue (perhaps microwavable rice instead!).

Meal 5: Another easy meal (that only uses 1 pan!). I’ll throw the pork, carrots, broccoli, and potatoes on a sheet pan, put it all in the oven and let it do it’s thing. I’m thinking of doing a honey mustard sauce on the pork and it’ll spill over onto some of the veggies as it cooks. We’ll have bread and fruit, and that will be that.

Meal 6: This meal is a favorite of mine for some reason. Maybe it’s because I get both the nostalgia of chicken nuggets and fries and the digestive benefit of a salad! I heat up nuggets and fries, make a salad and… ta-da!! Instead of a salad, the boys have fruit, veggies and hummus (but there’s not reason why I shouldn’t put salad on their plates!).
