Weekly Meal Plan 6/4-6/11

 

So here’s the thing. We go to the beach next week… wooohooo!!!! Which means, this week I’m doing double duty in the kitchen trying to feed us this week and then pre-make things for next week… whew! I tried to make it easy on myself by using some convenient staples from our freezer and pantry.

Now, let me explain. These meals are in random order, I plan meals and then assign them to nights as I see fit… it just depends how the week is going.

Meal 1: It’s a new recipe I’m trying, https://www.foodiecrush.com/mediterranean-chicken-quinoa-bowl-broccoli-tomato/#recipe. I chose it because I’m craving something like this, and it has tomatoes and broccoli - two accepted veggies in my household. Served with dips and bread, every one will by happy… and I get quinoa! I hardly ever make quinoa because I’m the only one that truly likes it. Let me rephrase… my family is learning to like quinoa.

Meal 2: We love these beef tips. They are ohhhh so good and quick cooking. I’ll roast red and sweet potato chunks on a sheet pan with some garlic salt and olive oil, add frozen green beans to the same sheet pan when the potatoes have about 20 minutes left to go and BAM... dinner is ready!

Meal 3: It’s on the menu every week… and I love it!

Meal 4: A complicated meal that I crave, but then regret making because I feel like once we all sit down to dinner there are too many ingredients on the table. I’ll roast or grill some mahi rubbed with cumin, chili powder and coriander, make some slaw (I’ll post my simple slaw recipe soon! Basically lime juice, honey, cumin and canola oil tossed with 3 color slaw), rinse and drain and can of beans, microwave a 90-second bag of rice, thaw some frozen corn and break out toppings like avocado, cheese, chips and salsa, and Greek yogurt (in place of sour cream). I’ll also have tortillas on the table. Whew… I’m tired already.

Meal 5: Simple. I’ll spiralize some zucchini in the morning (my kids are obsessed with helping me do this!). I toss a pinch of salt in the noodles, wrap them in a dish towel and store them in a big bowl (this helps absorb moisture). Right before we eat, I’ll cook some pasta for the kids, heat the zoodles in a pan (for mom and dad), microwave some marinara sauce, microwave some of my frozen meatballs (recipe to come), and heat up some bread.

Meal 6: Another easy dinner. I chop up some chicken thighs and add them to the simmer sauce (according to the directions) then add some rinsed and drained chick peas once it’s almost done. In another pan, I heat up Kirkland Stir Fry Vegetable Blend (they’re beautiful!). Serve all this with a bag of 90-second microwave rice, naan, and maybe some hummus.

Meal 7: A BREAK!!!!
