Weekly Meal Plan 6/19-6/25

 

Whew…. coming home from vacation is a doozy!! I gave myself some grace this week and tried to not go all out when it came to meal planning. Our bodies are craving some lighter fair after vacation so hopefully this meal plan will satisfy that need in a fairly simple way.

Let me explain:

Meal 1: An easy meal that caters to our “lighter fair” cravings. I bought some pre-marinated chicken thighs at the grocery (Chimichurri! Delicious!), I’ll whip up a big salad, and top it with the grilled chicken and a sprinkle of cheese. For the kids, I’ll heat up a bag of 90-second rice and serve it with fruit and the chicken. They will also get small (very small) portions of salad as their veggie - for exposure - I don’t expect rave reviews.

Meal 2: Trader Joes Carne Asada beef is one of our go-to’s. I’ll grill it, and pair it with sautéed peppers and onions (these could also be grilled… I may do that!), corn, avocado and a can of rinsed and drained beans. A perfect tex-mex bowl - and a little something everyone likes.

Meal 3: Always on the meal plan

Meal 4: This is a recipe I’ll post this week. It’s simply whole wheat pasta, chicken, tomatoes, peppers, and spinach all cooked in one pan. Most of the family loves this dish, and those who don’t eat mostly bread… and that’s okay, no separate meals here. It also makes for great lunch leftovers.

Meal 5: Another recipe to post! Grilled salmon with garlic, sundried tomatoes, and parsley. My dad has made this for years and it’s our favorite. We’ll pair it with another Trade Joes favorite, the Melodious Blend (lentils, garbanzo beans and tomatoes), steamed broccoli, bread and fruit. Salmon is hit or miss for the kids. I find that if they have a light afternoon snack and come to the table hungry, they tend to accept it more - as with anything, I suppose. I’ll probably find a day to grill this and the pork tenderloin to knock out two dishes in one grilling session.

Meal 6: I was scrolling through Pinterest and this recipe caught my eye: https://www.theorganickitchen.org/marinated-pork-tenderloin-with-peach-salsa/. It’s marinated pork tenderloin with a peach salsa. I’ll just throw corn, zucchini and squash on the grill along with the pork and dinner will be done… no pots or pans!
